I love including a high quality protein powder in dessert recipes! Protein is super important in balancing blood sugar. In addition to this, it also helps enhance the flavor of these bars. In these healthy homemade crunch bars, I like to use Truvani protein help add a hint of sweetness and chocolatey flavor. For the “crunch” I use brown rice cakes, which are super light and low in calories. They add the perfect crunchy texture without making them too dense. For your nut butter, almond butter tastes the best, but you could alway sub cashew butter, peanut butter or sunflower butter fi you want a nut free option.
I like to use Hu Kitchen chocolate baking chips in this recipe. They are simple in ingredients and lower in sugar. To make this recipe sugar free, you can easily use sugar free chocolate chips (like Lily’s) and sub the maple syrup for extra almond butter and stevia drops. Make sure the crunch mixture is completely frozen before cutting into rectangles- ensure to use a sharp knife so that they do not crumble! Store in the freezer and let thaw out for a few minutes before eating.
