This dish is full of flavorful spices- including onion, garlic, paprika, oregano, thyme and red pepper. In addition to enhancing the flavor of the dish, spices also help lower inflammation and protect our bodies from chronic disease. They are an excellent source of antioxidants with their high content of phenolic compounds. I love to include as many herbs and spices as I can in each dish to enhance flavor and receive all of these great benefits!
I love making this recipe because of how easy it is. For optimal creaminess, make sure you use full fat canned coconut cream. If enjoying the next day as leftovers, heat up in a skillet on medium heat and slowly add in extra coconut cream or a drizzle of olive oil. This will help preserve the creamy texture and make it just as good as a freshly made plate.
I also love to make extra chicken to keep around for a few days and enjoy on its own. The Cajun chicken itself is super flavorful and would make a great dinner when combined with some veggies like cauliflower mash.
For the pasta, my favorite brand to use is Jovial brown rice penne. It is gluten free and has a texture similar to whole wheat pasta! If you would like to enhance or lower the spice of the dish, feel free to increase or decrease the amount of red pepper flakes. It also tastes great when you add a sprinkle of red pepper flakes once it is plated and ready to serve.
