Preheat oven to 450
Cut squash into halves, scrape out seeds, and brush with 2 tbsp olive oil, and a dash of salt and pepper
Place face up on a foil lined baking sheet and bake for 30 minutes or until squash is tender and can be pierced with a fork
While squash is baking, cook onions and garlic in 1 tbsp olive oil on medium heat for 7 minutes until cooked through
Add turkey and mix until fully cooked
Mix in salt, pepper, thyme and chopped apple and turn to low heat and saute for 5 minutes.
Remove squash from oven and scoop out most of the cooked center, leaving some on the bottom and sides
Add squash filling to the turkey mixture and stir until fully mixed in
Scoop mixture into acorn squash halves and serve
Topped with chopped parsley, flakey sea salt and pomegranate seeds
