This savory fall recipe is full flavor and is super filling. Make for an easy & healthy dinner on a cold fall or winter night!

Turkey Stuffed Acorn Squash

Ingredients

  • 2 acorn squash
  • 3 tbsp olive oil
  • 1 lb. ground turkey
  • 1/2 white onion chopped
  • 2 tbsp minced garlic
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 small honey crisp apple chopped
  • Chopped parsley sea salt, pomegranate seeds for serving

Instructions

  • Preheat oven to 450
  • Cut squash into halves, scrape out seeds, and brush with 2 tbsp olive oil, and a dash of salt and pepper
  • Place face up on a foil lined baking sheet and bake for 30 minutes or until squash is tender and can be pierced with a fork
  • While squash is baking, cook onions and garlic in 1 tbsp olive oil on medium heat for 7 minutes until cooked through
  • Add turkey and mix until fully cooked
  • Mix in salt, pepper, thyme and chopped apple and turn to low heat and saute for 5 minutes.
  • Remove squash from oven and scoop out most of the cooked center, leaving some on the bottom and sides
  • Add squash filling to the turkey mixture and stir until fully mixed in
  • Scoop mixture into acorn squash halves and serve
  • Topped with chopped parsley, flakey sea salt and pomegranate seeds
