Grass Fed Ground Beef
Taco Seasoning
Cauliflower Rice
Bell Pepper
Avocado
Cilantro
Lime
The best part of this recipe is that you don’t need that may ingredients for it to be good. I love how simple it is on its own and as long as you have a good taco seasoning you’re good to go. My favorite is to use my Homemade Taco Seasoning, but when I don’t have any on hand I will always buy the Siete mild flavor one.
I love Force of Nature beef that is both grass fed and regeneratively sourced. It is also makes this recipe high in protein and super filling!
For this recipe you can use either cauliflower rice or jasmine rice. If adding in jasmine, I recommend cooking according to package instructions right after you put the bell peppers in the oven. Once the rice is cooked, then mix in the seasoning.
One of my favorite parts of this recipe is that you can really add whatever toppings you like. Sometimes I will add sliced radish, jalapeño, cherry tomatoes, pickled red onion, salsa, guacamole, etc. You can also roast other veggies like squash or zucchini with the bell peppers to throw in. There are so many options which makes this a good weekly meal because it can feel different every time!
