Creamy Cajun Chicken Pasta

Ingredients

Cajun chicken

  • 1 lb chicken breast
  • 1.5 tsp salt
  • 1.5 tsp onion powder
  • 1.5 tsp garlic powder
  • 2 tsp paprika
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 2 tsp nutritional yeast
  • 1/4 tsp red pep flakes

Sauce

  • 3/4 onion chopped
  • 9 oz gluten free penne (3/4 box)
  • 1/2 cup coconut cream
  • 1 can fire roasted diced tomatoes
  • 1/2 cup chicken broth
  • 3 tbsp nutritional yeast
  • 1/2 lemon juiced

Instructions

  • Mix all cajun chicken spices in a small bowl
  • Cut chicken into nugget sized pieces
  • Cover chicken in spice mixture
  • Cook on a cast-iron skillet on medium heat for 3 minutes on each side, and set aside
  • Cook pasta according to instructions, drain and set aside
  • In a large pan, sauté onion in olive oil for 5 minutes
  • Add in coconut cream, tomatoes, chicken broth, nutritional yeast and lemon juice and stir until smooth
  • Add cooked the pasta, cooked chicken and mix to combine
  • Let simmer for 10 minutes
  • Top with sea salt & chopped parsley!
