This easy recipe is great for healthy weeknight dinners with a flavorful meat sauce and perfectly roasted spaghetti squash. Its full of flavor and is super filling. Option to top with manchego, parmesan or red pepper flakes for extra spice!
Spaghetti Squash with Sage & Grass-fed Beef Ragu

Spaghetti Squash 1 spaghetti squash 1 tbsp olive oil 1/2 tsp salt 1/4 tsp pepper Ragu Sauce 1 pound ground grass-fed beef 1/2 onion chopped 1 tbsp garlic minced 5 sage leaves chopped 2 cups tomato sauce 1 tsp salt 1/2 tsp pepper 1 tbsp olive oil
Spaghetti Squash cut spaghetti squash in half, remove seeds and drizzle with olive oil, salt and pepper
lay face down on a parchment lined cookie sheet
bake at 400 for 40 minutes
let cool and scrape spaghetti squash into bowl
Ragu Sauce chop onion and sauté in olive oil and garlic on medium for 7 minutes or cooked through
add beef and chopped sage and mix until beef is fully cooked
mix in tomato sauce, salt and pepper
let simmer for 5 minutes before serving
