Spaghetti Squash with Sage & Grass-fed Beef Ragu

Ingredients

Spaghetti Squash

  • 1 spaghetti squash
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Ragu Sauce

  • 1 pound ground grass-fed beef
  • 1/2 onion chopped
  • 1 tbsp garlic minced
  • 5 sage leaves chopped
  • 2 cups tomato sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil

Instructions

Spaghetti Squash

  • cut spaghetti squash in half, remove seeds and drizzle with olive oil, salt and pepper
  • lay face down on a parchment lined cookie sheet
  • bake at 400 for 40 minutes
  • let cool and scrape spaghetti squash into bowl

Ragu Sauce

  • chop onion and sauté in olive oil and garlic on medium for 7 minutes or cooked through
  • add beef and chopped sage and mix until beef is fully cooked
  • mix in tomato sauce, salt and pepper
  • let simmer for 5 minutes before serving
