This vodka sauce is the perfect combo of savory and spicy. It is both dairy free and vegan, and made with whole food ingredients.

- 2 tbsp dairy free butter or ghee I used Miyokos
- 1 onion chopped
- 2 tbsp garlic minced
- 1 tbsp nutritional yeast
- 1 tsp red pepper flakes
- 1 tbsp tomato paste
- 1.5 cans tomato sauce
- 1/2 cup vodka
- 1 cup full fat canned coconut milk
- 1 package of gluten free lentil pasta
Cook pasta according to instructions
In a medium pan, sauté onion in butter until translucent (about 7 minutes on medium heat)
Mix in garlic, nutritional yeast and red pepper flakes
Add tomato paste, tomato sauce, vodka and coconut milk and let simmer for 15 minutes
Add pasta to pan and toss until combined
