Spicy Vodka Sauce

Ingredients

  • 2 tbsp dairy free butter or ghee I used Miyokos
  • 1 onion chopped
  • 2 tbsp garlic minced
  • 1 tbsp nutritional yeast
  • 1 tsp red pepper flakes
  • 1 tbsp tomato paste
  • 1.5 cans tomato sauce
  • 1/2 cup vodka
  • 1 cup full fat canned coconut milk
  • 1 package of gluten free lentil pasta

Instructions

  • Cook pasta according to instructions
  • In a medium pan, sauté onion in butter until translucent (about 7 minutes on medium heat)
  • Mix in garlic, nutritional yeast and red pepper flakes
  • Add tomato paste, tomato sauce, vodka and coconut milk and let simmer for 15 minutes
  • Add pasta to pan and toss until combined
  • Enjoy!
