If you’re like me and love a good balance of spice, my go-to seasoning for these fajitas is the Siete mild blend. It brings the perfect amount of flavor without overpowering the dish. If you have the time, though, I highly recommend making your own seasoning mix! You can find my DIY fajita seasoning recipe here, where I combine some of my favorite spices to create a custom blend.
I love using Siete cassava tortillas. They’re a perfect gluten-free option with a soft yet sturdy texture. To get them warm and slightly crisp with a little char, look out for my favorite method below.
Fresh shrimp can really elevate the flavor of the dish. If you use frozen shrimp, make sure to thaw them properly before seasoning to prevent them from releasing excess water on the sheet pan. Make sure to remove the tails before serving.
Feel free to swap out or add other veggies to your fajitas. For example, you can add mushrooms, cherry tomatoes, or even corn for a little extra sweetness and texture.
For deeper flavor, marinate the shrimp for 15-30 minutes in the spices and avocado oil before cooking. This gives the seasoning time to soak into the shrimp, making them extra flavorful.
Shrimp cook very quickly, so be careful not to overcook them. Once they turn pink and opaque, they’re ready! Overcooking can make them tough and rubbery.
For an extra layer of flavor, quickly char your tortillas on the stovetop over medium heat using tongs. It adds a smoky, grilled taste that pairs perfectly with the fajitas.
