Sheet Pan Shrimp Fajitas

Ingredients

  • 1.5 lb shrimp
  • 4 bell pepper sliced
  • 1 white onion sliced
  • 4 tbsp taco seasoning divided
  • 2 tbsp avocado oil
  • 1 pack cassava tortillas

Optional Toppings

  • cilantro chopped
  • lime
  • avocado
  • jalepeno sliced

Instructions

  • Preheat oven to 425 degrees F
  • Add the sliced bell pepper and onion to a parchment lined sheet pan. Toss with 1 tbsp avocado oil and 2 tbsps taco seasoning. Bake for 15 minutes.
  • Meanwhile, add the shrimp to a medium bowl and toss with 1 tbsp avocado oil and 2 tbsps taco seasoning.
  • When the veggies are done, remove them from the oven, toss and push them to one side of the sheet pan. Spread the shrimp evenly next to the veggies. Place back into oven and bake just until shrimp are pink, firm and cooked through, an additional 8-10 minutes.
  • Serve on warmed tortillas with cilantro, avocado, jalepeno and lime.
