Yummy salad with dates, almonds, rotisserie chicken, avocado and sourdough croutons. A healthy spin off of one of my favorite salad from Honor Bar in Dallas. Made with simple healthy ingredients that are all gluten and dairy free.

Salad 2 bunches of red leaf lettuce chopped 1 pint cherry tomatoes halved 1/2 cup almonds loosely chopped 1 cup corn drained and rinsed 10 dates pitted and halved 1 large avocado cubed 1 rotisserie chicken shredded 2 slices of gluten free and vegan sourdough Breadsrsly 1/4 cup cashew cream cheese Miyokos Champagne Vinaigrette 1/2 cup olive oil 1/4 cup champagne vinegar 1 tsp mustard 2 tsp minced garlic 1.5 tsp coconut sugar 1/2 tsp salt 1/4 tsp pepper
Mix all champagne vinaigrette ingredients in a blender or whisk in a small bowl
Add lettuce, tomatoes, almonds, corn, dates, avocado and rotisserie chicken to a large salad bowl and toss
Cover both sides of sourdough with avocado oil and cut into small cubes
Place cubes into the air fryer for 10 minutes at 375 (they should be crispy but not burned)
Slowly spoon small scoops of the cream cheese into the salad bowl along with the croutons
Pour in the vinaigrette and toss to combine
