These fudge like brownies super soft and rich in flavor. You wouldn’t even know that they are made with sweet potato! Make these for a healthy indulgent dessert. I like to use Elmhurst unsweetened cashew milk and Hu keto chocolate chips.

Sweet Potato Fudge Brownies

Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup coconut flour
  • 1 cup maple syrup
  • 1 cup almond butter
  • 3/4 cup cacao powder
  • 3/4 cup cashew milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1/2 cup chocolate chips

Instructions

  • To make sweet potato purée, halve sweet potato add to a parchment lined baking sheet
  • Bake at 375 F for 30 minutes or until tender to the touch
  • Let cool, then peel away skin and mash in a mixing bowl
  • Add sweet potato purée, almond butter, maple syrup, cashew milk and vanilla to a medium bowl and mix until combined
  • In a separate bowl, mix coconut flour, baking powder and cacao powder
  • Add dry ingredients to wet ingredients and mix until smooth
  • Fold in chocolate chips
  • Spread batter into a parchment lined 8×8 baking pan
  • Bake for about 45 min at 350 F
