Dairy Free Spinach Artichoke Dip

- 2 tbsp olive oil
- 1 onion chopped
- 2 tbsp minced garlic
- 1 can of artichoke hearts drained and chopped
- 1/4 cup vegan avocado oil mayonaise
- 1/2 cup plain unsweetened almond yogurt
- 1/2 can full fat coconut milk
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp arrowroot powder
Mix arrowroot with 1 tbsp of water and set aside
Cook onion in skillet until translucent
Sauté artichokes and garlic in a separate pan then slowly add the spinach until cooked
Add the onions, yogurt, mayo, coconut cream, salt and pepper
Add the arrowroot powder mix and stir for 2 minutes
Pour into an baking dish and bake for ~20 minutes at 350
