Dairy Free Spinach Artichoke Dip

Ingredients

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 tbsp minced garlic
  • 1 can of artichoke hearts drained and chopped
  • 1/4 cup vegan avocado oil mayonaise
  • 1/2 cup plain unsweetened almond yogurt
  • 1/2 can full fat coconut milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp arrowroot powder

Instructions

  • Mix arrowroot with 1 tbsp of water and set aside
  • Cook onion in skillet until translucent
  • Sauté artichokes and garlic in a separate pan then slowly add the spinach until cooked
  • Add the onions, yogurt, mayo, coconut cream, salt and pepper
  • Add the arrowroot powder mix and stir for 2 minutes
  • Pour into an baking dish and bake for ~20 minutes at 350
