If you want dairy-free rice crispy treats that are soft and gooey, but made with cleaner ingredients, this is my go-to version that comes together in just 10 minutes. I love keeping a batch on the counter for an easy sweet dessert, especially when I want something simple and comforting but still ingredient-conscious. These are naturally dairy-free and vegan, but honestly, you’d never know.
Ingredients: Dairy-Free Rice Crispy Treats
5 cups rice cereal
1 bag (10 oz) mini marshmallows
2 tbsp coconut oil
Pinch salt
One thing that really makes this recipe is the ingredient quality. I like using Dandies mini marshmallows because they’re made without dairy, or artificial dyes, and the ingredient list is much cleaner than most conventional marshmallows. They also melt really smoothly and stay soft once the treats set, which can be tricky with some alternative brands. For cereal, I usually reach for One Degree Organic rice cereal because it’s sprouted and super minimal ingredient-wise, or The Real Cereal Company rice cereal, which is also simple and stays really crispy in the treats. I made these in my Caraway mini saucepan, which I love because it heats evenly and makes it easy to control the low heat so the marshmallows don’t scorch.
How to Make
Line an 8×8 pan with parchment paper.
In a large pot, melt the coconut oil over low heat.
Add the marshmallows and stir constantly until just melted and smooth, making sure not to overheat.
Remove from heat and let sit about 30 seconds.
Stir in the rice cereal until fully coated.
Transfer mixture to the lined pan and gently press into an even layer without compacting too firmly.
Let set at room temperature for 30–45 minutes before cutting into squares.
Extra Tips
For extra gooey treats → use 4½ cups cereal
For firmer, classic bars → use 5½ cups cereal
Lightly oil hands or spatula when pressing into the pan
