This yummy soup is a staple in my weekly meal rotation. I love to make a big batch of it at the beginning of the week to have on hand. My favorite part is the tortilla strips that are so easy to make- I like to use Siete almond flour tortillas.
Healthy Chicken Tortilla Soup
Prep Time 18 mins Cook Time 40 mins
Soup 1 tbsp olive oil 2 tbsp minced garlic 1 yellow onion chopped 1 can crushed tomatoes 28 oz 1 pint chicken broth 1 can black beans drained and rinsed 1 can corn drained and rinsed 2 chicken breasts boiled and shredded 1 tbsp chili powder 1.5 tsp salt 1 tsp cumin 1/2 tsp pepper Tortilla Strips 4 almond tortillas sliced into strips 1 tbsp avocado oil Toppings 1 avocado cubed 6 radishes sliced 1/2 cup cilantro chopped 4 limes juiced
Add olive oil, garlic and onion to a large pot on medium heat
Sauté for about 5 minutes until cooked
Add all soup ingredients besides the shredded chicken and the tortillas
Let simmer for 15 minutes
Add the chicken to the pot and let simmer for 5 more minutes
While simmering, cover tortilla chips in avocado oil and cook in the airfryer for 4 minutes at 400
Pouring a bowl of soup and top with tortilla strips and other toppings!
