Healthy Chicken Tortilla Soup

Ingredients

Soup

  • 1 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 yellow onion chopped
  • 1 can crushed tomatoes 28 oz
  • 1 pint chicken broth
  • 1 can black beans drained and rinsed
  • 1 can corn drained and rinsed
  • 2 chicken breasts boiled and shredded
  • 1 tbsp chili powder
  • 1.5 tsp salt
  • 1 tsp cumin
  • 1/2 tsp pepper

Tortilla Strips

  • 4 almond tortillas sliced into strips
  • 1 tbsp avocado oil

Toppings

  • 1 avocado cubed
  • 6 radishes sliced
  • 1/2 cup cilantro chopped
  • 4 limes juiced

Instructions

  • Add olive oil, garlic and onion to a large pot on medium heat
  • Sauté for about 5 minutes until cooked
  • Add all soup ingredients besides the shredded chicken and the tortillas
  • Let simmer for 15 minutes
  • Add the chicken to the pot and let simmer for 5 more minutes
  • While simmering, cover tortilla chips in avocado oil and cook in the airfryer for 4 minutes at 400
  • Pouring a bowl of soup and top with tortilla strips and other toppings!
