Gluten Free and Vegan Pancakes

1 cup oat flour 1/4 cup tapioca flour 2 tsp baking powder aluminum free 1 cup unsweetened almond milk 1/2 cup coconut sugar 1 tbsp coconut oil melted 2 tbsp ground flaxseed 2 tbsp cashew butter coconut oil spray
Mix flaxseeds with 1/4 cup of water and let sit in the fridge for 10 min until it is a thick consistency
Combine all dry ingredients in a large mixing bowl
Add in almond milk milk, coconut oil, flaxseed mixture and cashew butter to dry ingredients
Mix with an electric mixer until it is a smooth batter
Spray skillet with coconut oil on medium/low heat
Add batter evenly and cook on each side until done (about 2 minutes on per side)
