Gluten Free and Vegan Pancakes

Ingredients

  • 1 cup oat flour
  • 1/4 cup tapioca flour
  • 2 tsp baking powder aluminum free
  • 1 cup unsweetened almond milk
  • 1/2 cup coconut sugar
  • 1 tbsp coconut oil melted
  • 2 tbsp ground flaxseed
  • 2 tbsp cashew butter
  • coconut oil spray

Instructions

  • Mix flaxseeds with 1/4 cup of water and let sit in the fridge for 10 min until it is a thick consistency
  • Combine all dry ingredients in a large mixing bowl
  • Add in almond milk milk, coconut oil, flaxseed mixture and cashew butter to dry ingredients
  • Mix with an electric mixer until it is a smooth batter
  • Spray skillet with coconut oil on medium/low heat
  • Add batter evenly and cook on each side until done (about 2 minutes on per side)
