This Fourth of July chia pudding is a fun twist on your classic breakfast! Chia pudding is one of my favorite breakfasts to meal prep. Chia seeds are super high in protein and fiber, helping keep you full and satisfied for hours. In addition to this, blue spirulina is rich and antioxidants and micronutrients. If you have made my Blue Coconut Chia Pudding, I know you will love this recipe too!
For optimal consistency, make sure to refrigerate the pudding mixture for at least an hour or overnight. The chia seeds will absorb the almond milk and congeal into a pudding consistency. My favorite coconut yogurt to use on top is Culina. Any vanilla protein powder will work, but my favorite to use in this recipe is Collagen Fuel. Feel free to switch things up and top with different fruits! I also love to add coconut shreds and cacao nibs on top.
