Creamy side dish that you would never know is made of cauliflower. Serve with grilled fish, chicken or steak.

- 2 heads of cauliflower
- 1 cup chicken broth
- 1 tbsp nutritional yeast
- 1 tbsp vegan butter or ghee I used Miyokos
- 1 tbsp chopped chives
- 2 garlic cloves
- 1.5 tsp salt
- 1/2 tsp pepper
Cut cauliflower into florets and steam in a pot with 1 cup of chicken broth for about 15 minutes (or until you can pierce with a fork)
Add the cauliflower to a blender or food processor with remaining ingredients and blend
Top with additional chives and a drizzle of olive oil
