Cauliflower Mash

Ingredients

  • 2 heads of cauliflower
  • 1 cup chicken broth
  • 1 tbsp nutritional yeast
  • 1 tbsp vegan butter or ghee I used Miyokos
  • 1 tbsp chopped chives
  • 2 garlic cloves
  • 1.5 tsp salt
  • 1/2 tsp pepper

Instructions

  • Cut cauliflower into florets and steam in a pot with 1 cup of chicken broth for about 15 minutes (or until you can pierce with a fork)
  • Add the cauliflower to a blender or food processor with remaining ingredients and blend
  • Top with additional chives and a drizzle of olive oil
