This simple warm salad goes great with grilled chicken, salmon or scallops. Serve this as a side dish or your main course. The dressing is easy to make and can be used for a variety of salads! I like to use Culina plain yogurt for the dressing and Applegate organic bacon.

Warm Brussels Sprouts Salad with Shallots, Bacon, Cranberries and Toasted Pine Nuts

Ingredients

  • 2 tbsp olive oil
  • 1 shallot chopped
  • 1 bag shaved Brussels sprouts
  • 1/4 dried cranberries
  • 2 tbsp pine nuts
  • 4 pieces of bacon cooked & cut into small pieces
  • 2.5 oz plain coconut yogurt
  • 1/2 lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 tsp minced garlic
  • 1/4 salt
  • 1/8 tsp pepper

Instructions

  • Sauté shallots in 1 tbsp olive oil for about 5 minutes
  • Add the Brussels sprouts and other tbs of olive oil and sauté for about 10 minutes until Brussels are cooked
  • In a separate pan, toast pine nuts for about 3 minutes, until lightly golden
  • In a small bowl, mix 1/2 container of yogurt with lemon juice, dijon, minced garlic, pinch of salt and pinch of pepper
  • Toss Brussels sprouts with dressing, and remaining ingredients
