I love this dish because you can swap or add in any seasonal vegetables you would like. In the fall I love to add in sweet potato, squash or carrots. It is also great with other herbs such as basil, parsley or dill. This recipe is great to meal prep and then reheat on a nonstick pan at meal time. Love this recipe? Add 1 tbsp olive oil and chopped onion to a large skillet over medium /high heat, sauté for about 5 minutes, stirring frequently until the onions are translucent
Add the garlic and sauté for 1 minute
Add ground turkey, cilantro salt and pepper. Cook for about 7 minutes, stirring occasionally until the turkey is no longer pink
Add in the zucchini, tomato and bell pepper. Cook for about 7 minutes, stirring frequently until the vegetables are tender
Add in the kale, mixing in for about 1 minute until wilted. Add extra salt and pepper to taste
Serve in a bowl and top with extra cilantro and salsa
