This Turkey and Summer Vegetable Hash is the perfect high protein lunch or dinner to meal prep for the week. You can make this one your own and customize with any seasonal vegetables you would like! I love using this summer blend of onion, zucchinis, tomatoes, peppers and kale.
I love this dish because you can swap or add in any seasonal vegetables you would like. In the fall I love to add in sweet potato, squash or carrots.
