Turkey and Summer Vegetable Hash

Ingredients

  • 1 lb ground turkey
  • 1 yellow onion chopped
  • 2 zucchinis chopped
  • 2 heirloom tomatoes chopped
  • 2 bell peppers chopped
  • 1 bunch of curly kale chopped
  • 2 cloves of garlic minced
  • 1 tbsp fresh cilantro chopped
  • salt and pepper to taste

Instructions

  • Add 1 tbsp olive oil and chopped onion to a large skillet over medium /high heat, sauté for about 5 minutes, stirring frequently until the onions are translucent
  • Add the garlic and sauté for 1 minute
  • Add ground turkey, cilantro salt and pepper. Cook for about 7 minutes, stirring occasionally until the turkey is no longer pink
  • Add in the zucchini, tomato and bell pepper. Cook for about 7 minutes, stirring frequently until the vegetables are tender
  • Add in the kale, mixing in for about 1 minute until wilted. Add extra salt and pepper to taste
  • Serve in a bowl and top with extra cilantro and salsa
