Add 1 tbsp olive oil and chopped onion to a large skillet over medium /high heat, sauté for about 5 minutes, stirring frequently until the onions are translucent
Add the garlic and sauté for 1 minute
Add ground turkey, cilantro salt and pepper. Cook for about 7 minutes, stirring occasionally until the turkey is no longer pink
Add in the zucchini, tomato and bell pepper. Cook for about 7 minutes, stirring frequently until the vegetables are tender
Add in the kale, mixing in for about 1 minute until wilted. Add extra salt and pepper to taste
Serve in a bowl and top with extra cilantro and salsa
