If you’re craving a sweet treat that’s indulgent yet wholesome, these chickpea blondies are exactly what you need. Made with simple, pantry-friendly ingredients like chickpeas, almond butter, and maple syrup, they are naturally sweet, fudgy, and packed with protein and fiber. Perfect for an easy weeknight bake, an afternoon snack, or a healthy dessert, they satisfy your chocolate cravings without gluten, dairy, eggs or refined sugar.

Ingredients: Chickpea Blondies

Chickpeas, drained and rinsed
Almond butter
Maple syrup
Vanilla extract
Salt
Baking powder
Almond flour
Vegan chocolate chips
Flaky sea salt

I love using simple, clean ingredients in this recipe to keep it wholesome yet indulgent. Chickpeas provide a protein and fiber boost while keeping the blondies soft and chewy. Almond butter adds richness and natural sweetness, while vegan chocolate chips give that perfect chocolatey bite. Flaky sea salt on top balances the sweetness and enhances the flavors.

I like Whole Foods Almond Butter for its simple ingredients and thin, creamy texture.
i use Hu Chocolate Chips because they’re dairy-free and add the perfect chocolatey bites throughout the blondies.

Instructions

Preheat oven to 350°F and line an 8×8-inch baking pan with parchment.
Blend chickpeas, almond butter, maple syrup, vanilla, salt, baking powder and almond flour until smooth.
Fold in vegan chocolate chips.
Spread batter evenly in the prepared pan and sprinkle with flaky sea salt.
Bake for 25–28 minutes, until edges are lightly golden and the center is set.
Allow to cool completely before slicing into squares.
Enjoy as a snack, dessert, or portable treat.

Extra Tips

Slightly underbake for extra fudginess; blondies firm up as they cool.
Add chopped nuts, shredded coconut, or a swirl of nut butter for variety.
Store in an airtight container at room temperature for several days or freeze for longer storage.
