How to Make It
Wash your sweet potato thoroughly and poke holes all over it with a fork (this prevents it from bursting).
Place it on a microwave-safe plate and wrap it in a damp paper towel—this helps steam it and keeps it moist.
Microwave on high for 5–8 minutes, flipping it halfway through. Time may vary based on the size of the potato and your microwave strength.
Start with 5 minutes, then check for softness. Add 1–2 more minutes at a time if needed.
Once it’s soft to the touch and easily pierced with a fork, it’s done!
Carefully unwrap (it’ll be hot!), slice it open, and fluff the inside with a fork.
Mix your shredded chicken with the buffalo sauce in a small bowl.
Top your sweet potato with the buffalo chicken, cubed avocado, green onion, cilantro, and a sprinkle of salt.
