Favorite recipe for the cold weather!! Its makes a really big batch- so I like to make it on Sundays to have around for the week. You can also freeze individual servings in mason jars to have on hand. Full of tons of veggies and protein.

1 tbsp olive oil 3 cloves garlic minced 1 white onion diced 2 bell peppers any color cored and chopped 4 large carrots peeled and diced 1 zucchini diced 2 stalks celery diced 1 medium sweet potato peeled and cubed 2 lbs ground turkey 2 cups vegetable broth 1 can tomato sauce or crushed tomatoes 15 ounces 1 can diced tomatoes in their juices 14.5 ounces 1 tbsp tomato paste 3 tbsp chili powder 1 tbsp ground cumin 1 tbsp paprika 1 tsp cayenne pepper 1 tsp salt 1/2 tsp ground black pepper 1/4 tsp red pepper flakes
Drizzle olive oil in a large pot on medium heat. Sautee onion and garlic until fragrant, around 3 minutes
Add ground turkey and cook until crumbled and brown, draining access liquid
Add the rest of the ingredients, mix and cook on medium/low heat for about 2 hours
