Root Vegetable Chili

Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 white onion diced
  • 2 bell peppers any color cored and chopped
  • 4 large carrots peeled and diced
  • 1 zucchini diced
  • 2 stalks celery diced
  • 1 medium sweet potato peeled and cubed
  • 2 lbs ground turkey
  • 2 cups vegetable broth
  • 1 can tomato sauce or crushed tomatoes 15 ounces
  • 1 can diced tomatoes in their juices 14.5 ounces
  • 1 tbsp tomato paste
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp red pepper flakes

Instructions

  • Drizzle olive oil in a large pot on medium heat. Sautee onion and garlic until fragrant, around 3 minutes
  • Add ground turkey and cook until crumbled and brown, draining access liquid
  • Add the rest of the ingredients, mix and cook on medium/low heat for about 2 hours
