Gluten Free and Vegan Snickerdoodle Cookies

- 1 cup almond flour
- 2 tbsp arrowroot flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/3 cup coconut sugar
- 1/4 cup coconut oil melted
- 2 tbsp maple syrup
- 2 tbsp flaxseed mixed with 1/4 cup water
Mix flaxseed and water and let sit for 5 minutes
Mix dry ingredients in a medium bowl
In a separate bowl mix coconut oil, maple syrup, flaxseed mixture
Add wet ingredients to dry ingredients
Form dough into balls and spread along a paper lined cookie sheet
Cook on 350 for ~8 minutes
Top each cookie with a sprinkle if cinnamon and let cool
