Gluten Free and Vegan Snickerdoodle Cookies

Ingredients

  • 1 cup almond flour
  • 2 tbsp arrowroot flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil melted
  • 2 tbsp maple syrup
  • 2 tbsp flaxseed mixed with 1/4 cup water

Instructions

  • Mix flaxseed and water and let sit for 5 minutes
  • Mix dry ingredients in a medium bowl
  • In a separate bowl mix coconut oil, maple syrup, flaxseed mixture
  • Add wet ingredients to dry ingredients
  • Form dough into balls and spread along a paper lined cookie sheet
  • Cook on 350 for ~8 minutes
  • Top each cookie with a sprinkle if cinnamon and let cool
