Avocado Tomato Corn Salad

Ingredients

Salad

  • 1 can corn drained
  • 1 pint cherry tomatoes quartered
  • 1/2 medium red onion diced
  • 1 avocado diced
  • 1/3 cup cilantro chopped

Dressing

  • 3 tbsp olive oil
  • 1 tbs honey
  • 1 lime juiced
  • 1 tsp garlic minced
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp pepper

Instructions

  • In a large bowl, combine the corn, tomatoes, red onion, avocado, and chopped cilantro.
  • In a small jar or bowl, whisk together the olive oil, honey, lime juice, garlic, and spices until well blended.
  • Pour the dressing over the salad and gently toss to coat everything evenly.
  • Let sit for 5–10 minutes to allow the flavors to meld. Serve immediately or chill until ready to eat.
