Ingredients

Mediterranean Chicken Thighs

  • 1 lb of chicken thighs
  • 1 tbsp avocado oil
  • 1 tsp pink Himalayan sea salt
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 clove garlic minced
  • 1/4 tsp pepper
  • 1 lemon sliced

Bowl

  • 1 red onion roasted
  • 1 head cauliflower roasted
  • 1 head broccoli roasted
  • 2 sweet potatoes roasted
  • 2 cups jasmine rice cooked
  • 1 cup hummus

Instructions

  • Marinade chicken in avocado oil and seasonings
  • Add a lemon slice on each chicken thigh
  • Evenly place them on a parchment lined cookie sheet and bake at 400 for 30-40 minutes or until cooked through
  • Assemble bowl with jasmine rice, cauliflower, broccoli, red onion and chicken
  • Top with hummus and a squeeze of lemon
