Crispy Chili Lime Salmon

Ingredients

  • 2 lb salmon
  • 1 tsp avocado oil
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp cumin
  • 1 lime juiced
  • 1/2 white onion
  • 4 cup cauliflower rice
  • 1/2 bunch cilantro chopped

Instructions

  • Preheat oven to 425
  • Mix seasonings in a bowl
  • Coat salmon with avocado oil and seasoning mix
  • Lay onto a parchment lined cookie sheet and bake in the oven for 15-20 minutes, until crispy and cooked through. Once cooked, top with lime juice
  • Meanwhile, in a large skillet, heat avocado oil over medium heat. Add the onin and sauté for about 5 minutes, or until soft and translucent. Then, add the cauliflower rice to the pan. Season with salt and pepper, and cook for about 5 minutes, stirring occasionally, until the rice becomes tender but still has a light, fluffy texture.
  • Transfer rice to a large bowl and mix in the chopped cilantro
  • Assemble into bowls with cauliflower rice, salmon and top with extra lime, salt and cilantro
