Crispy Sweet Potato Hash

Ingredients

  • 2 medium sweet potato
  • 1 yellow onion
  • 3 garlic cloves minced
  • 1/2 cup chicken broth
  • 1 tbsp coconut oil
  • 1/ tsp salt
  • 1/2 tsp pepper

Instructions

  • Wash, peel and then chop sweet potato into small cubes
  • Peel and chop onion
  • Add sweet potato, onion, garlic and chicken broth in a large bowl and toss until mixed
  • Spread evenly on a parchment lined baking sheet and roast at 375 degrees for 40 minutes
  • Warm skillet over medium-high heat and add coconut oil
  • Add the sweet potato and onion mixture and saute until crispy (about 8 minutes)
  • Season with salt and pepper and serve
