medium sweet potato

yellow onion

garlic cloves

chicken broth

coconut oil

Instructions
Wash, peel and then chop sweet potato into small cubes
Peel and chop onion
Add sweet potato, onion, garlic and chicken broth in a large bowl and toss until mixed
Spread evenly on a parchment lined baking sheet and roast at 375 degrees for 40 minutes
Warm skillet over medium-high heat and add coconut oil
Add the sweet potato and onion mixture and saute until crispy (about 8 minutes)
Season with salt and pepper and serve
