Honey Cinnamon Cookies

Ingredients

Dry Ingredients

  • 2 cups oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Wet Ingredients

  • 1/2 cup vegan butter
  • 1/2 cup coconut sugar
  • 2 tbsp honey
  • 2 tbsp ground flaxseeds
  • 1/2 tsp vanilla

Instructions

  • Prep flax egg by combining flaxseeds with 1/3 cup water and refrigerate for 10 minutes
  • In two separate bowls, mix all wet ingredients and all dry ingredients
  • Add wet ingredients to dry ingredients and mix to combine
  • Form into balls and place on a parchment lined cookie sheet
  • Refrigerate for 15 minutes, until dough is firm
  • Bake at 350 for 12 minutes
