Fig Arugula & Goat Cheese pizza with Caramelized Onions and Balsamic Glaze

Ingredients

  • 1 gluten free pizza crust
  • 1/2 white onion chopped
  • 2 tbsp olive oil separated
  • 1 tbsp balsamic vinegar
  • 5 figs sliced into fourths
  • 1/2 cup goat cheese
  • 2 cups arugula
  • 1 tbsp balsamic glaze

Instructions

  • sauté onions in olive oil on medium heat for around 5 minutes or cooked through
  • add 1 tbsp of balsamic vinegar and sauté for a few minutes until caramelized and remove from heat
  • spread 1 tbsp olive oil evenly on the pizza crust
  • assemble sliced figs, caramelized onions and goat cheese
  • bake at 450 for 12 minutes
  • top with arugula, a drizzle of olive oil and balsamic glaze
