10 Minute Gnocchi with Spinach and Chicken Sausage

Ingredients

  • 1 tbsp olive oil
  • 1 link chicken sausage
  • 1 cup cauliflower gnocchi
  • 1 cup spinach
  • 1/2 lemon juiced
  • 1 tbsp dairy free butter Miyokos

Instructions

  • slice sausage into small pieces
  • add olive oil, sausage slices and gnocchi onto a skillet on medium heat and cover
  • cook for about 3 minutes (until both are golden brown), then flip each piece to the other side for another 3 minutes
  • add spinach and sauté with the gnocchi and sausage until spinach is wilted and remove from heat
  • in a small bowl, melt the butter and mix with lemon juice
  • top gnocchi, sausage and spinach with the lemon butter sauce and enjoy!
