Turkey and Veggie Stuffed Peppers

Ingredients

  • 4 bell peppers
  • 1 cup cherry tomatoes chopped
  • 1 large zucchini chopped
  • 1 cup of cauliflower rice
  • 1/2 white onion
  • 4 cloves garlic
  • 1 lb ground turkey
  • 1 1/2 cups tomato sauce
  • 1 tbsp avocado oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 avocado
  • 1 handful of microgreens

Instructions

  • Cut bell peppers in half and remove seeds. Drizzle with avocado oil & Bake in oven at 375 for 15 minutes
  • Sauté garlic and onions for a few minutes, add ground turkey and cook until turkey is tender, about 7-10 minutes
  • Sauté cherry tomatoes, zucchini and cauliflower rice on medium heat
  • Add turkey and tomato sauce to rice mixture with salt and pepper
  • Let mixture simmer on low for 20 minutes
  • Serve in bell pepper halves and top with avocado and microgreens
