Cut bell peppers in half and remove seeds. Drizzle with avocado oil & Bake in oven at 375 for 15 minutes
Sauté garlic and onions for a few minutes, add ground turkey and cook until turkey is tender, about 7-10 minutes
Sauté cherry tomatoes, zucchini and cauliflower rice on medium heat
Add turkey and tomato sauce to rice mixture with salt and pepper
Let mixture simmer on low for 20 minutes
Serve in bell pepper halves and top with avocado and microgreens
