Pistachio Crusted Halibut

Ingredients

  • 2 lbs halibut
  • 1 cup pistachios
  • 1/2 cup parsley
  • 1 lemon juiced
  • 1 tbsp olive oil
  • 1 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Add pistachios, parsley, lemon, olive oil, nutritional yeast, garlic powder and salt to a food processor or blender
  • Blend for a few seconds until it is loosely chopped and ingredients are mixed
  • Lay halibut on a lined baking sheet
  • Spread pistachio mixture evenly on top of the halibut
  • Bake at 400 for about 15 minutes or until flakey
