Place chocolate chips in a microwave-safe bowl and add 1 teaspoon coconut oil.
Microwave in 30-second intervals, stirring thoroughly after each, until chocolate is fully melted and smooth (about 90 seconds total).
Pour a thin layer of melted chocolate into each compartment of the ice cube mold.
Place a date piece on top of the chocolate in each mold.
Add a small dollop of peanut butter and sprinkle a few peanuts over the date.
Cover with more melted chocolate.
Sprinkle with flaky sea salt, if desired.
Freeze until firm, then pop out the Mini Snickers bites and enjoy!
