Prepare noodles according to instructions.
Add all sauce ingredients to a small bowl and whisk until combined. Set aside.
Heat avocado oil in large saucepan over medium-high heat. Add the chicken and cook until almost cooked through, about 3 minutes on each side.
Add in the bell peppers and carrots, saute until the veggies are softened and chicken is fully cooked through.
Add noodles and sauce and toss everything to combine.
Separate into bowls and top with chopped green onion, cilantro, peanuts and lime.
