Chicken Pad Thai

Ingredients

Pad Thai

  • 1 lb chicken breast cut into inch sized cubes
  • 14 oz noodles I used Fettuccini Miracle Noodles
  • 1 red bell pepper sliced into thin strips
  • 1 cup shredded carrots
  • avocado oil

Sauce

  • 1/2 cup coconut aminos
  • 3 tbsp creamy peanut butter
  • 2 tbsp rice vinegar
  • 1 tsp salt
  • 1 tsp garlic powder

Optional Toppings

  • green onion chopped
  • cilantro chopped
  • peanuts chopped

Instructions

  • Prepare noodles according to instructions.
  • Add all sauce ingredients to a small bowl and whisk until combined. Set aside.
  • Heat avocado oil in large saucepan over medium-high heat. Add the chicken and cook until almost cooked through, about 3 minutes on each side.
  • Add in the bell peppers and carrots, saute until the veggies are softened and chicken is fully cooked through.
  • Add noodles and sauce and toss everything to combine.
  • Separate into bowls and top with chopped green onion, cilantro, peanuts and lime.
