Toasted Coconut Peanut Butter Protein Balls

Ingredients

  • 1 cup gluten free rolled oats
  • 1/2 cup shredded coconut
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1/4 cup ground flaxseed
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips

Instructions

  • Add the coconut shreds to a small pan over low heat. Continuously stir with a wooden spoon until lightly browned and immediately remove from heat.
  • Add all ingredients except for chocolate chips to a medium bowl and mix until a dough like consistency is formed.
  • Fold in the chocolate chips
  • Using a small cookie scoop, divide the dough and then roll into balls
  • Place onto a parchment lined cookie sheet and refrigerate for at least 10 minutes
  • Store in the fridge!
