Ingredients

gluten free rolled oats

shredded coconut
1/2
cup
peanut butter
1/2
cup
honey
1/4
cup
ground flaxseed

tbsp
chia seeds
1
tsp
cinnamon

tsp
vanilla extract
1/2
cup
vegan chocolate chips
Instructions
Add the coconut shreds to a small pan over low heat. Continuously stir with a wooden spoon until lightly browned and immediately remove from heat.
Add all ingredients except for chocolate chips to a medium bowl and mix until a dough like consistency is formed.
Fold in the chocolate chips
Using a small cookie scoop, divide the dough and then roll into balls
Place onto a parchment lined cookie sheet and refrigerate for at least 10 minutes
Store in the fridge!
