Creamy Vegan Cashew Pesto

Ingredients

  • 2 cups basil
  • 3/4 cup cashews soaked and drained
  • 1/4 cup olive oil
  • 1/4 cup nutritional yeast
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1 lemon juiced
  • 2 tbsp water to thin

Instructions

  • Soak cashews in a cup of water overnight or at least 4 hours, drain and rinse
  • Add all ingredients to a blender and blend until smooth
