Harvest Kale Salad with Chicken Sausage

Ingredients

Salad

  • 1 bunch of dinosaur kale
  • 1 sweet potato peeled and cubed
  • 1 honey crisp apple sliced into matchsticks
  • 1/2 cup sun-dried tomatoes drained rinsed and chopped
  • 1/2 cup raw pistachios
  • 1/2 wheel of Miyokos herb cashew cheese split into 4 spoonfuls
  • 4 links of Applegate chicken and apple sausage sliced
  • 2 tsp olive oil

Homemade tahini dressing

  • 1/3 cup tahini
  • 1 tbsp maple syrup
  • 1 lemon juiced
  • 1 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 cup water

Instructions

  • Add diced sweet potato to a sheet pan and drizzle olive oil, salt and pepper. Bake at 400 for 45 minutes until crispy
  • Drizzle 1 tsp olive oil on a skillet over medium heat. Add sliced chicken sausage, cooking for 5 minutes, flipping half way through
  • Add kale to a large bowl with 1 tsp olive oil. Massage for about 30 seconds
  • Add all ingredients to the kale. Drizzle the tahini dressing on top and toss until fully combined
  • Separate into 4 salad bowls and top with a scoop of cheese on each
