Add diced sweet potato to a sheet pan and drizzle olive oil, salt and pepper. Bake at 400 for 45 minutes until crispy
Drizzle 1 tsp olive oil on a skillet over medium heat. Add sliced chicken sausage, cooking for 5 minutes, flipping half way through
Add kale to a large bowl with 1 tsp olive oil. Massage for about 30 seconds
Add all ingredients to the kale. Drizzle the tahini dressing on top and toss until fully combined
Separate into 4 salad bowls and top with a scoop of cheese on each
