Banana Bread Protein Muffins

Ingredients

Wet Ingredients

  • 2 ripe bananas
  • 1/3 cup maple syrup
  • 1/2 cup almond butter
  • 3/4 cup non dairy milk
  • 1 tsp vanilla
  • 1 tsp apple cider vinegar

Dry Ingredients

  • 2 cups oat flour
  • 2 scoops vanilla plant protein powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp baking powder

Toppings

  • 1/4 cup walnuts chopped

Instructions

  • In a medium bowl, mix wet ingredients with an electric mixer
  • In a separate bowl, mix dry ingredients
  • Add wet to dry and mix with handheld mixer
  • Scoop batter into a coconut oil sprayed muffin pan
  • Top with chopped walnuts
  • Bake at 350 for 20-25 min
