Ingredients

Almond Flour Crust

  • 3/4 cup almond flour
  • 1/2 cup coconut flour
  • 1 tsp vanilla
  • 1/2 cup melted coconut oil
  • 2 tbsp maple syrup
  • 1/4 tsp baking soda

Peanut Butter Layer

  • 1 cup peanut butter
  • 1/3 cup coconut oil
  • 2 tbsp maple syrup
  • 1 scoop chocolate plant protein
  • 1 tsp cacao powder

Chocolate Layer

  • 1 cup chocolate chips
  • 1 tbsp melted coconut oil
  • 1/2 tsp flakey sea salt

Instructions

  • Mix almond flour, coconut flour, vanilla, coconut oil, maple syrup and baking soda in a bowl until combined
  • Press evenly onto a parchment lined 8x8 baking dish until it is flattened into a square shape
  • Bake at 350 for 12 minutes
  • In a small pot, combine peanut butter, coconut oil, and maple syrup on medium heat, stirring often until it becomes a caramel like mixture
  • Stir in the protein and cacao powder and remove from heat
  • Pour the peanut butter mixture over the almond flour crust and freeze for about an hour
  • Once set, slice into 12 rectangular bars
  • Melt chocolate chips and coconut oil in the microwave for 2 minutes, stopping every 30 seconds and mixing with a spoon to prevent them from burning
  • Dip each bar into the chocolate mixture and place on a parchment lined cookie sheet
  • Sprinkle flakey sea salt on top, and freeze for another 15 minutes until solidified & enjoy
