Roasted Beet Hummus

Ingredients

  • 1 cup roasted beet peeled and chopped
  • 1 can chickpeas drained and rinsed
  • 1 lemon juiced
  • 2 tbsp minced garlic
  • 1/4 cup tahini
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tbsp apple cider vinegar

Instructions

  • Add all ingredients except olive oil to a blender or food processor and blend until smooth
  • Slowly add in olive oil until desired consistency
  • Optional: top with olive oil, parsley, pistachio pieces and sea salt
